This is for a customer who purchased the Matouk’s for his friend he is visiting in Hawaii…Aloha
READ FIRST BEFORE COOKING:
You will need:
About a pound of flank steak
Veggies of you choice
Matouk’s Calypso Sauce
Oil for frying
Mix well, 1 lb. matchstick sliced flank steak* in 2 Tablespoons of soy sauce, 2 teaspoon of cornstarch.
Thinly sliced yellow onions, about 1 cup.
Julienne any veggies of your choice, about 3 cups.
2 to 3 Tablespoons of Matouk’s Calypso Sauce.
3 Tablespoons of oil…either olive oil (NOT EVOO, as it burns too easily) or any vegetable oil.
*How to matchstick your flank steak:
Cut the beef with the grain in 2″ wide strips. Then, cut each strip across the grain into 1/4″ thick slices. Stack the beef slices and cut across the grain into 2′ LONG MATCHSTICKS!
1. Heat up your wok/skillet. Add 1 tablespoon of oil. Add veggies including onions and cook to how you like them.
When done transfer to another plate.
2. Add another 1 to 2 Tablespoons of oil. Add beef but do not stir…make sure beef is in a single layer, the skillet should be very hot so that the beef sears. This is important…it has to sear! At a point add the veggies and then start to stir fry. Mix well until everything is cooked to how you like it.
Turn off the heat.
3. ADD THE MATOUK’S and stir fry with the heat off. You are now using the residual heat to cook the sauce and coat THE DISH. Again, stir until you think it’s done to your satisfaction.
Taste for salt and pepper and add them if you need to.
NOW IT”S READY TO EAT! ENJOY, this simple dish.
